Okay now first what's in the headlines this week... BSE found in the US. The mad cow is back in the headlines after the SARS scare recently break out again in S'pore. ('Indonesia bans U.S. beef imports on mad cow fears', The Jakarta Post, Saturday, December 27, 2003) "Indonesia has temporarily banned imports of U.S. cattle products except for dairy goods following the discovery of the deadly mad cow disease in the United States, an Agriculture Ministry official said on Friday."
In Iran, at least 5,000 people killed and 30,000 injured in an earthquake in the town of Bam. Other report cited casualties reached up to 20,000 people killed and 50,000 injured. (Thousands Killed in Earthquake in Iran , AP, Dec 27, 2003) "KERMAN, Iran - Entire blocks of buildings lay crushed and survivors lined up blanket-wrapped bodies in the street after a devastating earthquake leveled nearly three-quarters of the Iranian city of Bam on Friday, killing at least 5,000 people and injuring 30,000 others."

Recipe:
Okay this is the second part of the earlier recipe, let's continue with garnish for Nasi Kuning.
Yesterday we had, plain omelette, shredded; fried teri (we had teri Medan); kering tempe and perkedel kentang. N made the perkedel which is basically mashed potatoes with fried shallots mixed with an egg, make balls from the mix and fry them until golden brown.
For kering tempe, you will need some fresh tempe, shallots, garlic, palm sugar, chillis (optional, I use cabe kriting, slice dialonally and fry), lemon grass and salam leaves, salt. First, cut the tempe into small pieces -- about two cm long and half a cm thick. Fry them crisp. Set aside. Slice the shallots really thin and fry them. Set aside. Mince the garlic, saute it with a couple of spoons of cooking oil, add palm sugar and salt, lemon grass and salam leaves. When the aroma gets quite strong (don't wait until it burn), add a small amount of water. The concentration should be thick but not too caramel-like. Turn off the heat. Mix in the fried tempe, fried shallots and fried chilli. Mix well...

I did a couple of experiments yesterday, one failed and one was a success. I failed with the muffins but the Nasi Kuning was a great success. Let me just share the success story :)
Nasi Kuning (literally means yellow rice). This recipe is for one litre of rice. Wash the rice and put it aside. Shred a tablespoonfull of turmeric and boil it with about a cup of water. Strain and mix the liquid with coconut milk, thickness is really up to your taste -- I like it rather thin. Add a couple of stems of lemon grass, salam leaves (maybe you can substitute it with bay leaves?? I never tried it though) and a couple of pandan wangi leaves (well, there's really no substitute for pandan, if you can't find it then you just have to do without it), and dont forget salt! (I did, I forgot to add salt and mixed it after the rice was cooked). Set to boil and then mix it with the rice. Turn the rice cooker on. Or if you like to do it the hard way -- put it in a pot on medium heat; do not mix until you cant see the liquid.
Serve it with garnish. I have to go in a bit, I'll get back with recipies for the garnish.
